Two beautiful Barolo (DOCG) wines to start. Barolo is a premium wine region in Piedmonte, Italy. Wines are made from the Nebbiolo grape and are known for being very full-bodied and intense, with a recommendation to open and allow the wine to breathe prior to serving.

Caol Ila 12 yr Single Malt (43% £57.00) is an exceptional traditional scotch from a distillery situated in a small cove in Port Askaig, on the Isle of Islay. The colour of pale straw, subtle citrus fruit aromas dominate with just a puff of smoke to balance. Fresh, sweetly fruity, smooth yet firm, it begins sweetly on the palate then yields a fragrant smokiness and a lingering finish.

Jeffersons Kentucky Small Batch Bourbon (41.2% £50.45) shows high quality and care through its small batch production.  Aged in lightly charred barrels for a distinctive and delicate flavour, it is a warming spirit full of soft vanilla, toffee, toasted oak, honey, subtle spice and smoke. The finish brings hints of orange zest to add to the creamy vanilla and honey spice.

Teeling Single Malt Irish Whisky (46% £62.40) uses non-chilled filtration to bring a whisky shimmering with vibrant character. Hints of melon, figs and toffee balance with a lemon undercurrent. The palate brings a mix of dried fruit, citrus, creamy vanilla overtones and spice, with a sweet, yet spiced and woody finish.

MEAD

A classic English tipple, mead is a honey wine that is thought possibly to be the world's oldest alcoholic drink, first documented 4000 years ago. Local experts Lancashire Mead Co. have helped bring this divine drink back, using only the best honeys for their natural range, many of which are free from gluten and wheat and suitable for vegetarians. With no added sugar and a process to ensure a low carbon footprint, each batch is distinctly unique.

Aegir Mead (14.5% £20.00) pays homage to Aegir, God of the ocean and King of the sea creatures in Norse mythology. Fresh orange and tea are added during fermentation to create a ‘Tannined Melomel’ (fruited honey mead). This provides a tannined, full bodied flavour, and a slightly softer and fruitier taste to make it one of their most popular drinks.

Thor Mead (14.5% £25.00) is dedicated to the thunder God in Norse mythology, with his famous possession, the Mjöllnir (‘Lightning’) hammer. This mead is a ‘Metheglin’ (herbed honey mead) which uses Blossom honey and Citra Hops to provide a a light, hoppy flavour suitable for lovers of craft beer.

Viking's Blood (14.5% £25.00) owes its name to its deep red colour. Made with blackberries, blackcurrants and blueberries, it is a ‘melomel’ (fruited honey mead). It is wild fermented (no yeast is added), but uses the yeast in the fruit to achieve purity. Berries give it a smooth and deceptive, almost alcohol-free taste!
