This Saint-Emilion Grand Cru uses grapes from the La Gaffeliere vineyard of Chateau Eglise d'Armens, a vineyard superbly-situated with hillsides of calcareous clay and more sandy lower slopes. The vineyard is planted with 80% Merlot and 20% Cabernet Franc.
After manual harvesting, the grapes from different parcels are vinified separately. Several days cold maceration is followed by fermentation with pump-overs and cap punch-downs. Malolactic fermentation to reduce acidity and soften the wine takes place in new barrels and stainless steel, before blending at the end of winter and final maturation in oak barrels for 10 to 12 months.
The result is a truly silky Bordeaux of ruby red with amber hues appearance. The nose shows an enticing cloud of herbs, with red and black fruits mingling. The velvety palate shows soft tannins, ripe plum and black cherry with a hint of vanilla before an elegant finish. Try with duck, lamb, tomato pastas and pizzas, mushroom risotto, or Brie and Camembert cheeses.
