Grape: Cabernet Sauvignon
An elegant Cabernet Sauvignon from a Maremma vineyard on the Tuscan coast, where Cabernet has a short but glorious history. 28 days' fermentation followed by 12 months in tonneaux and a few months in bottle before release.
This is a restrained, velvety wine full of blackberries and plums lightly touched with spice on the lasting finish. Excellent with a selection of salami and aromatic cheese, and almost any red meat, especially served when rare if grilled or slow-braised.
