Only 20% of San Cassiano's grapes of perfect maturation are selected for use in their Amarone.  Corvina, Corvinone and Rondinella grapes go through slow, low temperature drying. Ageing is in French oak for 24 months with a further 12 months in bottle before release.\u003c\/p\u003e\n\u003cp\u003eThis Amarone shows aromas of \u003cspan\u003eraisins, plums, prunes, dark chocolate, slight leather and the finest touch of oak. The palate has\u003c\/span\u003e full-bodied structure, but still fresh and versatile, showing \u003cspan\u003edried black cherry, blackberry extract, liquorice, ground pepper and firm, fine-grained tannins. Try with slow-cooked red meats, steaks, hearty casseroles, and flavourful mushroom dishes. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003c\/span\u003e\u003cspan\u003eThe winery takes their name from the little village San Cassiano, in the core of Mezzane Valley, where olive trees are caressed by the sun. \u003c\/span\u003eThe story began in 1964 by tenant farmer Albino Sella and it has now expanded to reach three thousand olive trees and 4 hectares of vineyard with Albino's grandson Mirko Sella, who founded Azienda Agricola San Cassiano in 2004. The grapes remain in a drying facility for a few months in winter time. After fermentation, the wine begins its ageing process in barriques for around 24 months. The wine is then blended in wood vessels where it remains for a further 6 months. It's then bottled and refines for another 12 months before commercial release. \u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003eAn intense red ruby colour. Aromas of ripe fruits, cherries and notes of dried herbs and ground cloves. A full bodied wine that's rich and warm with ripe and round tannins, yet still succulent and fruit driven. Try with braised and stewed meat and game, grilled meats and mature cheese.\u003c\/p\u003e\n\u003cp\u003eMontezovo wines are produced entirely with grapes from family-owned vines spread over the main Verona appellations: Valpolicella, Garda, Lugana and Lessini. Each wine is the result of conscious choices made in the vineyard, where the interaction between grape, soil, climate and location is all carefully considered. Many of Montezovo’s vineyards lie at unusually high altitude for the region, with most around 550 metres above sea level and some reaching beyond 900 metres.
