At Pheasant’s Tears, they produce hand-crafted natural wines according to ancient Georgian principles. They start by growing Georgian wine varietals in ideal terroir using organic principles to produce luscious, healthy grapes. All their wines are fermented and aged in qvevri, clay vessels lined with organic beeswax and buried in the earth. They ferment using naturally occurring yeasts and painstaking attention to achieve full-bodied wines of character and sophistication deeply rooted in the richness of the Georgian soil and Georgian wine culture.
The name comes from a Georgian tale in which the hero claims that only a wine beyond measure could make a pheasant cry tears of joy. With each bottle that leaves our hands we strive to meet that ancient standard.
