Cellar Notes:After the grapes have been through the sorting tables. Alcoholic fermentation takes place, at a controlled temperature of no more than 26ºC with the total time in the vat amounting to 14 days. Once the blend has been determined for this special type of wine, it was put into oak casks and aged for 32 months, followed by a further 3 years’ rounding off in the bottle.
Appearance:a dark-cherry coloured wine with brick red hues
Aromas:complex and balsamic, with burnt wood and hints of spices such as black pepper and cinnamon
Palate:an oily mouth-feel, with good backbone and concentration of tannins, round and supple with a long, silky finish.
Serving Notes:pairs well with ham, mature cheeses, red meat, all kinds of roasts and grills and game casseroles
