Cellar Notes:After crushing the fruit was fermented on skins in closed fermentors with regular plunging and pumping over. This has allowed gentle extraction of flavours while still retaining the ripe fruit flavours and avoiding the extraction of harsh tannins and astringency.
Appearance:Deep cherry red
Aromas:Ripe dark plum and cherry aromas with a dash of spicy plum
Palate:Dominated by beguiling ripe cherry flavours with a touch of spiciness that combine to fill the front and mid-palate. Fine, soft tannins and balancing acidity make this a soft, easy drinking style with loads of flavour
Serving Notes:This is an early drinking style with fresh upfront fruit flavours. It is ideal to enjoy now without the need to further cellar. Great for summer entertaining served with char grilled atlantic salmon or a pasta dish with a spicy herb infused sauce
