| Cellar Notes: | 20-40 year old vineyards, harvested by hand at 6-8t/ha mid-October. The grapes are destemmed and crushed before being fermented in a mixture of wooden, cement and stainless steel casks for 8-12 days with daily pump overs and delestage. The wine is then aged for a further 24 months in a mixture of old and new French oak barrels. Light filtration before bottling. |
