| Cellar Notes: | Made from a single parcel of 100% Syrah, this wine is matured in a mixture of American and French Oak for 12 months to give ripe black cherries and damsons with a hint of spice and pepper on the palate with vanilla ice cream on the nose. Only 1500 bottles were made of this vintage. |

The 7.5 hectare estate is made up of many parcels of land along a 10km stretch of the Fennel Hills (Les Fenouillèdes) of the Roussillon in southern France.
They chose not to concentrate the vines around one village or one valley firstly to lessen the risk of wide scale destruction by the hail storms that sometimes visit the region but also to deliver a variety of flavours from our grapes based on the soils they are in, amount of sun they receive, age of the vines, height of the vineyard, etc. This is known as the “terroir” in French.
