| Cellar Notes: | The grapes are pressed immediately on arrival at the winery and the must is left in contact with the skins for just long enough to ensure the right hue and flavour profile. The juice thus obtained is cooled to 10C in stainless steel settling tanks. The temperature of the must is allowed to rise naturally to 16C as which point selected yeasts are introduced; alcoholic fermentation continues at this temperature for 2-3 weeks. The finished product is clarified by racking followed by filtration. |
