Cellar Notes:This outstanding champagne was produced in the cellars of the thirteenth century Saint-Nicaise Abbey in Reims. The greatest care is taken at every stage of production. "Comtes de Champagne" is only produced when all the conditions, essential to its unique style, are met, the harvest must be of exceptional quality and worthy of vintage champagne. It is made exclusively from white Chardonnay grapes from the most renowned vineyards of the Côte des Blancs. Only wines from the first pressing (La Cuvée) are used. This guarantees the wine's finesse. 5% of the wines used in the blend are aged in new oak barrels (one third of which are replaced every year), thus enhancing the intrinsic qualities of the final blend.
Appearance:Pale gold. Its bubbles are exceptionally fine and persistent, forming a delicate foam.
Aromas:Its discriminating bouquet has a hint of spice and lemon with a light plant or floral scent of mild tobacco and tea leaf. On the nose the aromas are delicate and with a subtle nuances of wood, but there is great underlying depth.
Palate:On the palate it offers a lively, clean but balanced first impression. It is fine and lean yet displays excellent length. Flavours of candied citrus fruits predominate, but there is a balanced touch of nuttiness.
Serving Notes:This makes the finest aperitif before any meal. It accompanies a selection of delicate canapés, in particular caviar as well as light seafood dishes such as lobster and Dover sole.
