Cellar Notes:Hand selection of the grapes upon arrival is performed twice before a light crushing and chilling of the must. The small batches are fermented separately in temperature controlled stainless steel tanks before transferral to new French oak barriques where the alcoholic fermentation is completed and the malo-lactic fermentation begins. The wine is left on the lees in barrel with regular batonage before racking and blending. A light filtration is performed before bottling.
Appearance:Yellow tinged with green.
Aromas:White spices, vanilla, minerals, citrus and understated ripe tropical fruits are abundant on the nose.
Palate:Stylish winemaking shows through with judicious use of oak to balance and add complexity on the clean, lifted palate which echos the nose with pineapple, melon, peach and pineapple fruits, creamy vanilla and slightly spicey characters. The finish is delightful, fresh and lively, persistant and ending with a soft, creamy lick.
Serving Notes:Lobster bisque, pan fried veal escalope with mushroom and tarragon or roasted two inch thick pork fillets with apple and cinnamon.
