Hand harvested and collected in small crates to prevent splitting and early, uncontrolled fermentaion, the grapes are fermented at controlled low temperatures in stainless steel to preserve their aromatic freshness. There is no oak used at all in the production of this wine, but each tank is left in contact with the lees for added complexity before a natural cold settling, racking, blending and bottling. Production 3000 bottles. |

| Serving Notes: | Unlike basic Chablis which performs very well as an aperitif, this wine requires a partner to show at its best, try it with goats cheese and pesto bruscetta, Mediterranean salad with squid and pine nuts, lobster and other shellfish. |

The Michel family have been cultivating their passion for tradition and the Chablis terroir since 1850. The winery is situated right in the heart of the village, with the 25-hectare vineyard spread over the very first slopes that were discovered by Cistercian monks in the 11th century. 40 years ago, the family decided to stop making the wine in wooden barrels, preferring to create clean, pure and precise Chablis without adding artificial woody tastes.
Through this philosophy, combined with the limited yields inspired by organic wine-growing techniques, the Domaine has developed a worldwide reputation for fine wine-making in stainless steel tanks.
