| Cellar Notes: | Domaine Louis Michel currently works with 21 hectares of vineyards, many of them Premier and Grand Cru. Until as recently as the 80's, Jean-Loup (the Winemaker) fermented and aged his wines in old oak barrels, today, however, there is a more modern approach and all the wines are fermented in stainless steel with varying lengths of contact with the lees to add complexity. This protective approach allows for a much fresher expression of the Chardonnay grape, and crisper, cleaner wines throughout. |

| Aromas: | With a pronounced, vibrant nose showing citrus and floral aromas with hints of brioche. |
| Palate: | Full of mineral flavours alongside zippy citrus and green apple characteristics. The finish is elegant and very fine. |

The Michel family have been cultivating their passion for tradition and the Chablis terroir since 1850. The winery is situated right in the heart of the village, with the 25-hectare vineyard spread over the very first slopes that were discovered by Cistercian monks in the 11th century. 40 years ago, the family decided to stop making the wine in wooden barrels, preferring to create clean, pure and precise Chablis without adding artificial woody tastes.
Through this philosophy, combined with the limited yields inspired by organic wine-growing techniques, the Domaine has developed a worldwide reputation for fine wine-making in stainless steel tanks.
