| Cellar Notes: | Clos Dady can also be enjoyed as a very stylish aperitif. Just like champagne, it is a world in itself, the perfect accompaniment for those special moments shared with family and close friends.The 4 Ha vineyard from which the grapes are sourced is planted with 35 - 40 year old vines with a density of 5000 vines per Ha. Harvest takes place from September through to October, by hand, and selected by each individual berry, so that only those infected with 'noble rot' (botrytis) are picked. Back at the cellar, the grapes are pressed and the must, very rich in sugar, is fermented slowly in tanks with a smaller portion fermented in oak barrels. |

ClosDady is a tiny (3.5 hectare) property situated between Chateau de Malle and Chateau Bastor Lamontagne in the commune of Preignac. Christophe and Catherine Gachet, the owners, were dentists and press attaché respectively before taking over the estate. The wines, in a very short time, have acquired a considerable reputation in France for their concentration, balance and depth of flavour.
